
As we continue our journey through China, I have been spending time reflecting on our time in Laos. Thinking back to things that made me love Laos so much. There is too much for me to put in one yak post. So instead I will share something small but valuable during the time I spent in Laos. My host mom taught me how to make Kopiak noodles during our homestay. I became addicted to this noodle soup and sometimes ate it twice a day. There are no measurements so just add ingredients to your preference. You can make it vegetarian if you want or add a different kind of meat than beef. Whatever floats your boat. I hope you enjoy this dish as much as I do.

Ingredients:
-Water
-Ground Beef
-Rice Noodles
-Cilantro
-Soy Sauce
-Bullion (Cubes or powder)
-Lime
-Fish sauce
