Headline: I still haven’t figured out spell check

Hey all this is cooking day 2. All this serves two people

Vejetales al Panko:

Medium large zuccini

2 Medium Carrots

1/2 tsp salt

2 eggs

panko

1/4 tsp black pepper

SAUCE:

1 oz soy sauce

Ginger

1 oz water

4 tbsp sugar

1 tsp Worcestershire sauce

1 star anis

1 spring of cilantro

 

Peel carrots and cuts off ends

Cut off ends of zuccini. Cut it in half and then cut 4 cuts leaving a big square in the middle (the 4 ends with rinds). Slice them in slices. I have photos

Slice carrots in rectangles

Boil veggies and add salt

Crack eggs into a bowl and whisk

Put panko in a bowl and set everything aside

SAUCE TIME

Put the soy sause in a pan and heat on low heat

Cut ginger in half (the open way/like a hot dog bun face down) leave the rind on and put in the pan

Add water, cilantro, and sugar

Mix

Add star anis and leave to cook and thicken

DONE WITH SAUCE

Drain veggies

Mix veggies with salt and pepper

Egg and bread the veggies

Fry until Panko is golden brown

Serve with sauce

 

NEXT RECIPE

Aji de Quinoa (Can also be chicken)

1 medium onion

1/2 tsp crushed garlic

3 tbsp aji amarillo

About 200 grama Quinoa

1 tsp salt

1/2 black pepper

2 oz crema de leche

1 tbsp parmesean

Oregano molido

Olive/vegetable oil

Cut the ends off the onion

Cut in half, take off the peel, and cut into little squares almost a mince

Saute onion until golden brown (add olive oil)

Add garlic

Add aji, mix and let cook (if it sticks add more oil)

Add salt and pepper

Add cooked quinoa

Add crema de leche, cheese and stir

Add oregano

Decorate and serve
