Hello again-
Today we went to the market and made two sauces both of which are served over boiled and sliced potatoes of your choice. Both sauces can also be garnished with a hard boiled egg
Papa a la Huancaina
Serves 5
1/2 Onion
5 Aji Amarillos (If you don’t have peppers but only the paste stuff. Ignore everything pepper related until the blender)
1/2 head of garlic
170 g of evaporated milk
135 g of soda crackers
1 tsp salt
1/4 tsp black pepper
Vegetable oil
2 kilos potatoes
100g Queso Fresco
Take your half an onion and cut it in half. Cut each quarter in 3rds
Wash and cut the ends off of aji amarillo and cut in half the long way. Scrape the guts and seeds with a spoon and cut into big chunks. Wash the chunks again.
Put the pepper and onion in a hot pan (no oil)
When the onion is golden brown toasted add the garlic (cut the half into 3rds). Mix
Once the veggies are nice and toasty add oil and mix
Add crushed crackers, salt, and pepper. Mix until peppers are semi blackened/ edges are black
Put the mix from the pan into the blender and add cheese and milk and blend
If it needs more liquid add water, if it needs to be creamier add oil.
Ocopa
1/2 onion
200 g of mixed herbs (oregano, huacaty, cilantro,prejil, hierba buena)
2 kilos potatoes
1 aji amarillo
100 g peanuts
100 g queso fresco
2 soda crackers
Vegetable oil
1/2 head of garlic
1 tsp salt
1/4 pepper

Add herbs and mix until they’re wilted
Add peanuts, and cheese and mix until melty
Put 3 broken crackers into the blender and add mix from the pan. Add salt and pepper.
Again add water if it needs more liquid and oil to make it creamier.
If you don’t have the herbs you can use spinach and basil.
