Today we made two fantastic dishes. These included Sollerido, a delicious Peruvian salad and Lomo Saltado, an amazing beef dish that has been my personal favorite in Urubamba. Since I was feeling a little under the weather last week, I will be writing about both recipes today. Unfortunately these will be our only two dishes this week as we will be traveling to Machu Picchu tomorrow. Hope you enjoy! First I will be writing about Sollerido and then Lomo Saltado.
Ingredients for Sollerido:
100 grams of Lima Beans
20 grams of cheese (we used Andean Cheese)
1(12) tbsp Salt
12 tsp Pepper
12 tsp Olive Oil
5 leaves of Parsley
1(12) tbsp Vinegar
How to make Sollerido:
a) Peel and halve the Lima Beans.
b) Put water on to boil- add Lima Beans and Salt
c) Boil Lima Beans for approx 8 mins, drain.
d) Cut the carrots into little squares and put in water to boil.
e) Cut tomato in half the long way and gut it. After cut into 4 slices and cut out the middle white bit. Cut in half again and cube into big chunkssquares.
f) Take your onion and cut off both ends. Afterwards peel and take the heart out. Cut into squares and boil for a few minutes.
g) Mince parsley and add to bowl with Lima Beans, Carrots, and Tomato. After add Salt and Pepper. Add lime juice and onion. Mix well.
h) Add vinegar and olive oil. Mix well.
i) Cube and add cheese. Mix well.
j) Add to final plate and enjoy!
Ingredients for Lomo Saltado:
6 small chunks of Lomo Fino (Look up for similar types of meats near you)
1 tsp Oyster Sauce
12 tbsp Vinegar
Olive Oil (for cooking)
14 tsp Pepper
1 cup of Rice
10-20 French Fries
How to cook Lomo Saltado:
a) Cut tomato into 4 chunks, taking out the heart of each of them.
b) Cut onion into thick slices
c) Cook meat and add onions and tomato. Add olive oil, vinegar, and oyster sauce.
d) Add salt and pepper
e) Once cooked, add to plate.
f) Cook rice and add to plate.
g) Cook french fries and add to plate.
